Carrot Salad is a salad made with carrots. Shredded carrot is often used in this salad. Carrots, being root vegetables, are not only tastier when they are grown in compost-rich soil, but they are more nutrient-rich as well. It has a delicate balance of sweet raw carrot, tangy lemon juice, olive oil, Dijon mustard and herbs.
